Kebabs are a delicacy that bridges the north and the south. Our friends make it all the time. I got this recipe from them and have really enjoyed it.
INSTRUCTIONS
Using a blender or food processor grind the spinach, coriander, mint, chilies, and garlic to a fine paste.
Mix the yogurt, chili powder, and some salt and pepper to the herb paste.PREP TIME: 20 minutes
COOK TIME: 20 minutes
TOTAL TIME: 40 minutes
INGREDIENTS
1 lb chicken breast
2 cups baby spinach
2 Thai chilies
½ cup coriander leaves (cilantro)
½ cup mint leaves, plus extra 1 cup for the dip
4 cloves garlic
1 tbsp chili powder (cayenne pepper)
1 cup plain yogurt, plus an extra
2 cups for the dip
Salt and pepper as per taste
