HARA BHARA CHICKEN KEBABS

Kebabs are a delicacy that bridges the north and the south. Our friends make it all the time. I got this recipe from them and have really enjoyed it.

INSTRUCTIONS

Using a blender or food processor grind the spinach, coriander, mint, chilies, and garlic to a fine paste.

Mix the yogurt, chili powder, and some salt and pepper to the herb paste.

Cut the chicken in small pieces.

Rub the mixture on the chicken properly and drizzle some oil on it.

Cover it and marinate for a few hours, the more the better.

PREP TIME: 20 minutes
COOK TIME: 20 minutes
TOTAL TIME: 40 minutes

INGREDIENTS
1 lb chicken breast
2 cups baby spinach
2 Thai chilies
½ cup coriander leaves (cilantro)
½ cup mint leaves, plus extra 1 cup for the dip
4 cloves garlic
1 tbsp chili powder (cayenne pepper)
1 cup plain yogurt, plus an extra
2 cups for the dip
Salt and pepper as per taste
Oil
